One of My Go-To Meal's: Nourishing Lentil Soup
If you’ve been following us for a while now, then you probably know just how much I enjoy cooking nourishing meals for family and friends. One of my go-to meals - especially this time of year - is a nourishing lentil soup. Packed with protein, fiber, iron and so much more; this soup is amazing. Nutrition aside, its something that I started adding to our regular meal rotation about a year back when I was trying to lose a bit of post-Covid weight. Made up of 25% protein, this soup is delicious and filling, and can be sipped on throughout the day. Enjoy!
2 cups lentils (soaked over night)
2 onions, chopped
3 carrots, chopped
1.5 quarts low-sodium chicken stock (add more as needed)
3 TBS butter
1 TBS avocado oil
1 lemon
1 TBS peppercorn
Salt, to taste
Garlic powder, to taste
Curry powder, to taste
Chop up onions and carrots. Add them to a large pot with butter and olive oil. Sautee until onions are translucent.
Drain lentils (after having soaked them over night).
Place lentils in a large pot.
Add chicken stock and a little salt.
Bring to a boil, reduce heat. Skim off the foam that rises to the surface.
Cook for 30 minutes.
Squeeze the juice of 1 lemon into the soup.
Grind up and then add the peppercorn.
Add in salt, garlic powder and curry to taste. Blend with an immersion blender.
Lentils are packed with: potassium, iron, magnesium, zinc, Vitamin B.
Lentils are made up of 25% protein (so an excellent meat alternative)
Lentils are high in fiber
Lentils are full of phytochemicals, many of which help protect against chronic diseases i.e. heart disease, cancer, and type 2 diabetes.

Something I love is having friends and family over. Whether planned or spontaneous, the door is always open! When Martin told me we had some people coming over last night, I quickly got some things together to make a beautiful, simple meal.
